Substitution policy |

"Are you okay with substitutions?" I am asked that question by the worker, getting ready to put the groceries in the back of my car. "Yes," I say, glad my mask muffles the excitement in my voice. Although the pandemic has restrained my life in many ways, the grocery store substitution policy has created a new world of culinary delights. In that pre-pandemic world when I did my own grocery shopping, I couldn't imagine not getting exactly what I wanted. I picked out my own fruits and vegetables and selected exactly the foods I liked. But this pandemic has forced me to be flexible and maybe even a little creative. I've created dishes out of foods I would never order – like the bratwurst, which was a wonderful when sliced and put in a cheesy rice with tomatoes, onions, and red beans. If I must say so myself, it was delicious. Certainly, I will be glad when this pandemic is over. However, as others have said, even when the pandemic is over, our world won't be the same. And we won't be the same – substitutes of our former selves but, in many ways, perhaps more gracious, accepting, and maybe a little excited, about our new world. | ||||||||||||||||
